From various documents (GPS 7500 connector pinout as well as the dual-port cable pinout), I think that this is the mapping between GPS 7500 and InCommand:

I don't have a pin-out for Ag Leader's null modem adapter.
It looks to me like the pins you're going to need are 3,2,5, and very very much want to ensure that pin 4 is not connected.
