Do you use frozen dough or make your own dough out of flour and ingredients?
Most of the bakeries in the food stores use frozen dough. Then they just have proofing ovens to raise it and cooking ovens to bake the frozen dough. Way back 20-30 years ago it was that way when we went through the baking school (only a day of it) at K-State. The real bakeries did their own dough but the food stores that had a fresh "bakery" used all frozen dough. Which according to the commercial K-State guys was as good as any. They claimed nothing wrong with frozen dough and that gave the stores the consistency of product they needed for customer satisfaction.
