Many buying freezer beef/pork have no idea on actually shrink & edible meat. Processing here is expensive.
Every abattoir gets calls from first time buyers ...goes like "where is the rest of my meat" as I paid $xxxx for a side of beef & processing and when weighed on bathroom scales it only weighs XXX
A sow boned out for sausage is lucky to be 50% of live wt.
