Don't know about the hair thing, I've been to Italy and most of the rest is true. There is really no gluten in their bread. I'm sensative to gluten and I can eat all I want in Italy with no problem. Chef we talked to said the same thing about US and Canadian wheat. I saw lots of weeds in the wheat fields in Italy.
Are you actually sensitive to gluten or just the refined wheat flour with its additives? My uncle is gluten sensitive. Yet this fall he was running the combine and eating wheat out of the grain tank by the handful. I asked him about it and we did some rough math that he ate at least 5 slices of bread worth of wheat in a day and he felt fine. But if he eats a half a slice of boughten bread it gives him a gut bomb... |
