I can't imagine being able to sell three acres at one time to a self pick market.  How much traffic do you get?  Most ornamentals are supposed to be planted about five inches or so apart in 30 inch rows.  If the typical customer takes six, that's only 30 inches of row out of about 17000 feet of row per acre..  You would need 6800 customers to use one acre, or about 1000 per day for a week.  If you have that kind of traffic, go for it, but I think that you are really being optimistic.
