If I had alfalfa/grass mix, the alfalfa would be gone by now (I don't rotational graze). But with my hay fields that have alfalfa/grass, once it freezes, I cut quickly, because the alfalfa will start drying (it's dead at that point) and losing leaves (the most valuable part). If the cows are used to eating alfalfa, there shouldn't be any problem. Bloat blocks would be a nice 'safety' net, too.
