We eat a fair amount of pork here. I smoke loins for 3 to 4 hours or till they reach 130 or so then triple foil wrap and let them sit for a couple hours till meal time. I do know after not buy a whole hog for years and after doing it a year ago I won’t do it again. I remembered all the cuts I don’t care for.
